Pancakes, quick and easy

For quite a long time, I have been struggling to find a great pancakes recipe. I finally found an excellent one that is super simple and so fast to make that you won’t ever hesitate again to make it whenever you feel like having a great breakfast. Prepare your maple syrup, heat up your crepe pan, let’s go !

Prep time : 10 to 15 minutes
Cooking time : about 2 minutes per pancake

Ingredients (for about 6 to 8 pancakes) :
Dry elements:
– 190g flour (T55 or more)
– 2 pinches baking soda
– 1 sachet baking powder
– 1 sachet vanilla sugar
– 2 pinches salt

Moist elements :
– 80g butter
– 220ml milk
– 2 eggs

Start by putting all the dry elements in a bowl and mix them. Use a mixer if you have one, it will make doing this recipe a lot faster and simpler.

Then, in a saucepan, put the butter cut in dices and let it melt on a light fire. Once that is almost completely done, take it off the fire and mix by stiring the pan with a round gesture of the arm in order to let it finish melting. Then, add the milk as well as the eggs, that you’ll have whisked a little bit beforehand. Mix.

If you are using one, put the mixer back on at its lowest speed. Pour the moist elements in multiple steps. Try not to work the paste too much, it should be smooth ; it is ok if there are still lumps when you are over. You can then directly cook your pancakes or put the paste in the fridge for the night, they’ll be better then. Incidentally, I frequently prepare more paste that I can eat in one batch, and I stock it in my fridge so that I can quickly cook one or two pancakes on the morning, before going to work – a pure bliss !

Heat your crepe pan up on a quite light fire, and grease it with a tasteless vegetal oil using a kitchen towel. Pour a ladle of paste on the pan and wait until you see the pancake cooking on its outer part, and the air bubble holes congeal in the center. Then, turn it over and let it cook for 30 more seconds. If you want to serve multiple pancakes at once, heat up your oven at thermostat 1, add a glass of water in it and put your pancakes as you cook them on a plate, covered with aluminium foil.

Serve with a knob of butter and a healthy amount of maple syrup.
