Marinated Salmon, Leek and Mustard Quiche

Prep time: 40 minutes
Cooking time : 50 minutes

Ingredients for a 6 persons quiche:

For the pastry:
– ome premade shortcrust pastry
or
– 300g flour
– 150g butter
– 1 pinch salt
– 1/2 glass lukewarm water (about 8cl)

For the filling:
– 3 leeks
– 1 yellow onion
– 300g fresh salmon
– lime
– sweet pepper
– 70g grated cheese
– 1 tablespoon cooking oil

Pour l’appareil:
– 3 eggs
– 20cl thick crème fraîche (you can replace it by one plain yoghurt, and lighten it by replacing some of the crème by milk)
– 1 tablespoon traditional wholegrain mustard
– lime
– salt, pepper

Filling’s Preparation

The day before, prepare the salmon. Remove the skin if necessary, and cut it in small dices. Put it in a bowl, add some sweet pepper, and splash it generously with lime juice. Put some plastic wrap and let it rest during the night.

The day after, start by mincing the onion. Throw it in a hot pan with some oil and a pinch of salt. Leave it to sweat on low heat for a few minutes.

During this time, take care of the leeks. Slice them, trying to keep some of the light green part. Wash well in a colander, using your fingers to separate it.

Add the leek to the onion in the pan and leave it on low heat for 20 minutes, stirring from time to time.

Shortcrust Pastry Preparation

I strongly recommend you to make the pastry yourself. It is healthier, as it is surely fresher and preservative-free, but it is also really easy to make. You can use my step by step recipe to learn how to make it.

Line a tart tin with your pastry and prick it with a fork. Now is a good time to start heating your oven at 150ºC (thermostat 5).

Mixture’s Preparation

Whisk the eggs in a bowl. Add the crème, yoghurt or milk, depending on what you chose to use. Add the mustard, salt and pepper, whisk again until the mixture is homogeneous.

Ending the preparation and baking the quiche

Start by spreading the salmon evenly on the pastry.

Recover it with the leek.

Add the mixture and the grated cheese.

Put in your oven for about 50 minutes. If the quiche is not colored enough, let it in the oven for a few more minutes, and raise the heat a bit.

Serve with some lettuce or a chicory salad.
