Salmon and Zucchini Waffles, And Its Zucchini and Ricotta Cream

Since I got a waffle item for my electric grill for Christmas, I recently looked into this delicious dish that is so easy to make and reinvent. While looking around for a salty waffles, I stumbled upon a recipe that I changed a bit to my tastes. It mixes zucchini with smoked salmon in the waffle’s batter, and zucchini with ricotta in an smooth cream that you spread on top. Fast to cook, nourishing, tasty, these waffles make for a perfect meal, to complete with some sweet waffles.

Prep time : 10 to 15 minutes
Cooking time : 2 minutes per batch of waffles

Ingredients for about ten waffles (4 persons) :
For the waffles’ batter :
– 150g flour
– 1 sachet baking powder
– 2 eggs
– 250ml milk
– 50g butter
– 1 medium sized zucchini
– 150g diced smoked salmon
– 80g grated cheese (a strong cheese if possible, such as a good comté cheese)
– some salt
– some pepper

For the cream :
– 200g ricotta cheese
– 1 medium sized zucchini
– 1 small yellow onion
– 1 teaspoon minced dill
– 1 dash lemon juice
– some salt
– some pepper

Start by making the waffles’ batter. First, grate one of the zucchinis. The, totally melt the butter and put it aside. Put the flour, the baking powder and a pinch of salt in a big bowl, make a well. Add the eggs in the center and start mixing with a whisk, starting from the center to slowly add the dry elements to it. Pour then, carefully and little by little, the milk, then the melted butter, while continuing to mix until complete amalgamation of the mixture. Once done, end by adding the grated cheese, zucchini and salmon, as well as a bit of pepper. Mix one last time and let it rest while you prepare the cream.

Grate the second zucchini and finely mince the onion. In a new bowl, put the ricotta cheese and work it a bit in order to give it a creamy appearance. Add the dill and the lemon, then the zucchini and onion. Salt and pepper while tasting in order to correct it (you can replace the pepper by some piment d’Espelette pepper).

Put the waffle iron close to the dining table and cook your waffles as you go along so that they are served hot. You can plate it up as a slice of bread with a waffle and some cream on top, or as a sandwich, with two waffles. Serve it with a simple and fresh salad, and its homemade vinaigrette sauce.
